In honor of the upcoming Memorial Day weekend when everyone starts barbequing hot dogs and hamburgers and most Vegans/Vegetarians feel completely left out, I thought it was a great time to share Gwyneth Paltrow’s Homemade Veggie Burgers and No-Fry Fries from her cookbook, My Father’s Daughter. What I love most about these burgers is they are natural, nutritious and of course delicious! The patties are made mostly of rice, beans, and seasoning, which is great because it’s not just processed soy like most veggie burgers. I used Gwyneth’s recommended toppings of avocado, tomatoes, red onion, and added lettuce on toasted whole wheat buns. If you are going to have burgers you have to have fries! To be honest, I screwed up on the first batch of fries. I failed to skin the potatoes and didn’t use enough oil to coat the fries. Second batch…way better! I skinned the potatoes and made sure to coat each fry in oil. Needless to say, they were amazing! The best part? I didn’t feel one iota of guilt for indulging in a burger with a side of fries because it was so healthy!
